So, I had a DAY yesterday. A total #firstworldproblems kind of day. Nothing catastrophic happened, but put it all together and yesterday’s series of events were enough to land me curled up crying in bed.
So I made #homemade cookies. #showmethecookie

Chocolate Chip Cookies
(adapted from my peaches and cream cookies)
What you need:
2 1/4 cups flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup softened butter
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 teaspoon vanilla
1.5 cups chocolate chips
How to:
Preheat oven to 350 degrees
In a medium bowl combine flour, baking soda, and salt
In a large bowl cream together butter and sugars (I use a handheld beater), add egg and vanilla, beat until smooth.
Slowly add dry ingredients to the wet mix. Once combined stir in chocolate chips.
Line baking sheet with foil/parchment/silpat; roll dough into small balls then flatten a little on the baking sheet (to 1/4 – 1/2 inch). Warm day? Refrigerate dough for 15-30 minutes.
Bake:
11 minutes. Allow to cool slightly on baking sheet then transfer to cooling rack.

Verdict: delicious! This is my new go-to cookie recipe. I still cried, but at least I had cookies.
