I love Sundays.
This morning, after a magical 11 hours of sleep (oh yah, 930pm bedtime on a Saturday night, I am the epitome of cool), I spent an hour reading the latest issue of Marie Claire, another hour doing intervals at the gym, followed by a very hot, very long shower, an extra large cup of coffee, and leisurely brunch.
Breakfast, even on weekends, is usually oatmeal or fruit and yougart or cereal; I don’t typically crave pancakes. Except yesterday morning. I wanted nothing except pancakes.
On a scale of one to crazy cat lady how lame is googling “pancakes for one”?
I won’t make you admit your single lady/gent status to google; so, just between us, here are pancakes for one.
What you’ll need (makes 1 serving of 2 pancakes):
1/3 cup flour (all purpose or whole wheat)
1 tablespoon sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon cinnamon
pinch of salt
1 large egg
1/4 cup milk
1 teaspoon oil
1/2 teaspoon vanilla extract
Separate egg yolk (into medium mixing bowl) from white (into separate large bowl), add milk, oil, and vanilla into med bowl. Mix in dry ingredients (sure, you could mix them separately as well, but the recipe is so small, you don’t need to). Fold in beaten egg white (beating the egg white separately makes the pancakes extra fluffy). I think you can take it from here – you know how to cook up a pancake right?
I had mine with homemade fruit compote (heat 10 fresh strawberries, quartered + 2 tablespoons sugar over medium-low heat until jam-like) and lemon greek yougart.
Why can’t adults have March Break and enjoy pancakes and have long leisurely chats over mugs of coffee? (which some of I’m Fit Possible Ambassadors did this morning)
