Hands up if you crave hot-out-of-the-oven chocolate chip cookies on rainy days! You too? Welcome to the unofficial club. Even though it’s been 175 degrees (with the humidex, of course), I couldn’t get chocolate chip cookies off the brain yesterday; that is, after I had been craving them for daaaaays. Because if you haven’t noticed, it’s rained or threatened to thunderstorm for the entire month of July…pretty much.
Thank you to the dozens of people out there who have slaved away, perfecting a recipe so I can indulge in an afternoon snack!
2 Chocolate Chip Cookies
2 tablespoons softened butter
1 egg yolk
2 tablespoons white or brown sugar
1/4 cup flour
1/4 teaspoon baking soda
a dash or 2 of cinnamon
a wee pinch of salt
a wee splash of vanilla extract
2 tablespoons chocolate chips (I used mini, cause they’re cute, and you get a better chocolate to cookie ratio)
Mix all ingredients in a bowl (no need to separate wet/dry)
Bake at 350 degrees for 8ish minutes
And voila! In about 10 minutes total you have 2 big, soft, chewy cookies.
Dunk in cold milk or iced coffee. Hello summer snacktime!
ps: I cut with cookie cutters after they baked; works like a charm. eeeep! so cute little mini heart cookies.
